                           Kale & Sausage Saute


1/2 onion, sliced
1 large clove garlic, chopped
1 large clove scallion, chopped
1 tomato, cut in small pieces
1/4 yellow pepper, chopped
1/4 orange pepper, chopped
1 small zucchini, chopped   
handful of green beans, chopped
handful raw sunflower seeds
6 organic turkey breakfast sausages, cut in 1/2 inch slices
4 leaves kale, chopped, after extracting stems
grape seed oil, enough to coat bottom of pan
olive oil, enough to coat vegetables to keep from sticking, as cooking

Coat bottom of frying pan with grape seed oil.  Saute onions, garlic, scallions, and sunflower seeds, until onions are soft. Add turkey sausage, and green beans, cook until done. Add peppers, tomato and zucchini, cook until zucchini is tender, add kale. Turn heat to low, put lid on pan and let kale steam a few minutes, until tender but still bright green. This is a great meal for breakfast, lunch or dinner.   Enjoy!

       Kale is on my list of super foods. Very high in calcium, it is also great for the thyroid, so it gives people energy, and helps with weight loss.
